Cheesy Chicken Spaghetti Casserole

Preheat the oven to 375°F.

Snip the noodles a bit smaller with kitchen scissors so they are not too terribly long. Put the diced chicken, noodles, and diced tomatoes and chilies in a 9 × 13-inch baking dish.

Put the cream cheese, broth, salt, pepper, paprika, chili powder, onion powder, and garlic powder in a blender and blend until smooth. Scrape the mixture into the baking dish using a spatula. Mix in 2 cups of the cheddar. Top with the remaining cheddar and bake for 30 to 35 minutes. Broil for just a couple minutes at the end to make sure all the cheese is golden brown and bubbling, but watch it doesn’t burn.

MAKE A FAMILY MEAL:
- Enjoy with a large side salad with vinaigrette and an optional nonstarchy veggie for a side, such as steamed asparagus with a little melted butter or coconut oil and salt. This is an ultracheesy main dish, so think moderation if you also want cheese or ranch on your salad or on your side veggies.
- If you feel like eating some dessert, try a baby-size shake or smoothie in the Shakes and Smoothies chapter (page 468) or perhaps an Incredible Peanut Butter Cookie Muffin (page 371). No need to tag on more cream cheese or cream in your dessert. We always want to respect the heavy S fats and not overdo them.
- Growing children and other Crossie peeps can include whole-grain garlic bread or another healthy starch.
