Make the dressing. Put all the ingredients in a bowl and use a stick blender to mix well. (Or you can just mix with a fork, mashing the cherries as best you can; it doesn’t matter if the dressing stays a little chunky.)

Assemble the salad. Put the chopped lettuce on a large dinner plate and top with the chicken, cherries, and rice or quinoa. Pour the dressing over the salad and top with the almonds.
