PEARL CHATS: Now you can enjoy chicken salad the slimming way. This is deliciously creamy with sweet pops of grape or apple and a just right crunch of nuts. Enjoy open-face piled on sprouted-grain bread or wrapped in lettuce leaves. While Serene doesn’t use Laughing Cow Light cheese, I sure love it. Blended with the Greek yogurt, it makes this dressing creamier and cuts down the tartness of the yogurt, but you can leave it out if it doesn’t fit your purist approach to THM. Instructions

  1. Put the yogurt and cheese wedge in a small bowl along with garlic and/or onion powder, and black pepper and salt to taste. Blend with a stick blender until smooth (or whisk really well with a hand whisk).
  2. Add pepper flakes to taste, the chicken, onion, grapes (or apple), and nuts and stir well. Serve open-face on the bread or wrap in lettuce.

From Trim Healthy Table:

Add some cut veggies like red bell pepper or cucumber to the side of your plate. Feel free to fill up further with Speedy Chocolate Milk (page 457) or an E-friendly baby-size shake from the Shakes and Smoothies chapter (page 468).
