Fudgaroons
Description
Fudgaroons are a delightful hybrid of rich fudge and macaroons. They are a decadent but waist-whittling melt-in-your mouth moment. They contain all the trimming powers of the MCT (middle chain triglycerides) found in coconut oil, but also boast all the detoxifying and satiating fiber found in whole coconut. Best of all they are so simple to make, with only a few ingredients. This recipe is found in the "Delicious Desserts & Treats - Candies & Bars" section of the Trim Healthy Table Cookbook, page 423.

Place all the ingredients in a food processor (if the coconut butter is hard, break it up into smaller clumps with a fork or butter knife as you add it to your machine). Process until smooth, then place in a glass baking dish (or even better, use a plastic tray that can easily pop out your mixture when set).

Chill in the fridge until firm. Score into squares and eat a few pieces after letting it sit out for a few minutes to get a little softer. Store the remaining pieces in a zippy bag in the fridge.

- Fudgaroons ~ (Page 423) ~Ingredient List states to use “coconut cream”, the instructions say “coconut butter”. Remove coconut cream from ingredient list and replace with coconut butter.
