For the Lemon Poppy Boost Muffins

For the Lemon Boost Glosting (optional)

Instructions

  1. Preheat the oven to 350°F. Spray 12 cups of a muffin tin with coconut oil.
  2. Combine all the dry ingredients in a large bowl. In a smaller bowl, whisk the whole eggs with the egg whites. Put the coconut oil into a mug, pour the hot water over it, and stir so it melts. Let it cool a little, then stir into the egg mixture. Add the lemon juice and vanilla.
  3. Combine the wet and dry mixes and pour the batter into the muffin cups. Bake for 25 minutes. Remove from the tin and then enjoy a muffin or two with a pat of butter, or spread some of the dairy-free glosting over each muffin.
  4. For The Lemon Boost Glosting
  5. Put the cold water, lemon juice, and gelatin in a small bowl and stir until dissolved. Add the boiled water and coconut oil and let the oil melt. Add the lecithin, collagen, baobab powder, vanilla, sweetener, and salt. Blend with a stick blender or whisk super well.
