This Italian-style meatloaf is a crowd-pleaser. It is moist and flavorful with a marinara sauce that harmonizes superbly with mozzarella cheese. Picky onion-despising children won’t know it is in here because the onion is processed into the sauce. This recipe is found in the “Oven-Baked Meats & Fish” section of Trim Healthy Table Cookbook, on page 214. This recipe is a family-serve recipe that feeds 6 to 8 people. (Halve the recipe if your family is smaller or make in full and freeze half.)

Ingredients
For the Meatloaf
For the Sauce
Instructions
-
Preheat the oven to 350°F.
-
Put the eggs, onion, garlic, Worcestershire sauce, parsley, salt, pepper, Parmesan, and Baking Blend (or oats) in a food processor and process well for a minute or two until smooth.
-
Add the contents of the food processor to the meat in a 9 × 13-inch baking dish and mix all thoroughly together.
-
Make the sauce. Don’t bother washing the food processor. Add the canned tomatoes, tomato sauce, oregano, basil, sweetener, onion powder, and garlic powder and process until smooth.
-
Pour half of the sauce into the baking dish and mix well with the meat. Smooth the meat into a flat loaf inside the dish. Pour the remaining tomato sauce on top, then cover with the mozzarella cheese. Bake for 50 minutes. The loaf releases a lot of fluid. Pour half of it out once cooked, but keep some in, surrounding the loaf as it helps keep it moist and flavorful.
Note
MAKE A FAMILY MEAL:
- For the weight-loss plan, WWBB Garlic Bread (page 245) and a side salad are beautiful accompaniments to this meal.
- Growing children or others needing Crossovers can have the garlic bread, but made with sprouted grain bread in place of the WWBB Garlic Bread.
