Preheat the oven to 425°F. Spray a baking sheet with coconut oil.

Cut the peppers into canoe shapes: If using mini peppers, just halve them, but you’ll get several canoes from the large pepper.

Mix together the tuna, mayo (or mayo mixture), and any optional add-ins in a bowl. Stuff the mixture into the pepper canoes, top with mozzarella, and place on the baking sheet. Bake for 10 to 12 minutes.
