Place the split peas and the water in a large soup pot. Cover the pot, bring to a boil, then reduce the heat and simmer. While the peas are simmering, add the onion, green onions, celery, garlic, sage, bay leaves, and dried parsley. Simmer until the split peas have lost their form and are mushy.

Now make your Trimmy: Discard your bay leaves first, then ladle 4 cups pea and vegetable soup into a blender. Add your core Trimmy ingredients—TH MCT oil, gelatin, collagen (if using), and lecithin (if using)—the vinegar, salt, black pepper, cayenne, garlic powder, liquid smoke, nutritional yeast, and okra. Hold the lid down tightly and blend to creamy perfection, then pour it back into the pot.

Add the frozen peas and chicken and let simmer for several minutes more until everything is beautifully cooked through and the flavors have melded. Taste and adjust the flavors to “own it.” Keep history alive on your table!
