We need one hearty enough to stick to our ribs. This salad is big and beautiful and has the hearty thing down like a boss. This recipe is found in the “Hangry Meals for One” section of Trim Healthy Table, page 308, and is a single-serve recipe.
Quick Rip Hearty Kale Salad

Make the dressing. Shake all the ingredients super well in a small jar with a lid . . . do the rumba with it, or whisk in a bowl.

Assemble the salad. Put the kale in a large single-serve salad bowl . . . no teensy dainty bowl, K? Toss in the apple and toast chunks. Pour the dressing over. Now dollop your cottage cheese in a beautiful mound in the center.

The next pointer is super important, so listen up . . . don’t mixy mixy the cottage cheese into your other treasures in your bowl. Just fork it into your salad bites from time to time as your whim and heart lead. Some bites may choose to go cottage cheese–less and others may get a good ’n’ hearty dunk in the yummy stuff.

Into Continued..... This salad is big and beautiful and has the hearty thing down like a boss. It has a good crunch and chew factor and a bunch of protein to tame the wild, hangry food thoughts scurrying through your brain like mad geese. There are no light leaves in this here hangry salad. I use curly kale, which carries more boldness for your poor hangry mouth. My favorite part is how the scrumptious dressing gets trapped in the little pockets of crumply toast texture and bursts in your mouth with each chomp. It has a good crunch and chew factor and a bunch of protein to tame the wild, hangry food thoughts scurrying through your brain like mad geese.

FP & S Options Note:
- For FP, leave off the toast and add broken-up Savory Sesame Crackers (page 504). Reduce the apple to ¼. Add diced fresh tomatoes and cucumber.
- For S, leave off the apple but include the tomatoes and cucumber. Throw in a handful of walnuts (you could even toss ’em quickly in a small amount of tamari and cayenne pepper and put under the broiler for a bit to toast them while you are ripping your kale). Up the oil amount to 1 to 2 tablespoons.
