For the Salad

For the Easy Ranch Dressing

Optional Toppings

Instructions

  1. Brown the meat in a large skillet over medium-high heat. If the meat is not at least 96% lean, once cooked, rinse it very well under hot (better yet, boiling) water to release all the fat. Return the meat to the skillet and add the chili powder, cumin, paprika, garlic powder, onion powder, salt, and water. Simmer for 2 to 3 minutes, then remove from the heat.

  1. Put the chopped lettuce, tomatoes, beans, and corn in a large salad bowl.

  1. Make the ranch dressing. Combine the yogurt, seasonings, and parsley flakes in a small bowl.

  1. Dump the dressing into the large bowl with the salad and mix well to coat. Add the seasoned meat. Toss all the ingredients well. Add the toppings if desired.

Recipe Notes

From Trim Healthy Table:

MAKE A FAMILY MEAL:

  • For the weight-loss plan, have a big bowl or two just as written. Or you can pair this with a baby-size FP shake or smoothie from the Shakes and Smoothies Chapter (page 468) for more a filling factor. Or have Speedy Chocolate Milk (page 457) on the side.
  • Growing children can enjoy fats like grated cheese and avocado on their salad for a Crossover.
