This is amore. You can’t help but fall in love with this rustic Italian stew inspired by the flavors of cacciatore. Now, if you have an Italian Mama who made cacciatore for you, you’d remember a bone-in chicken dish with incredible seared-in flavors. This is not exactly that. We can’t compete with Italian Mamas who spent hours over the stove infusing flavor. But this dish is wonderful in its own right and so much quicker and easier for your fast-paced life. This recipe is found in the “Sanity-Saving Crockpot & Electric Pressure Cooker Meals” section of Trim Healthy Table Cookbook, page 101. This recipe is a family-serve recipe that feeds 6 to 8 people.
Stew of Love

This is amore. You can’t help but fall in love with this rustic Italian stew inspired by the flavors of cacciatore. Now, if you have an Italian Mama who made cacciatore for you, you’d remember a bone-in chicken dish with incredible seared-in flavors. This is not exactly that. Recipe Notes
From Trim Healthy Table~
You can easily make this with chicken breasts instead of beef and even use the FP option of no cream. And yes, you can certainly take the time to use bone-in chicken here and sear it before putting it in the pot if you’d rather. However you “own” this dish, you’ll feel the love in every bite of this soul-warming stuff!
_____
ELECTRIC PRESSURE COOKER DIRECTIONS: Place all the ingredients (except the heavy cream) in a pressure cooker. Seal and cook at high pressure for 1 hour. Use quick pressure release. Add the cream (if using) and serve.
NOTE: This recipe was created and tested using a 6-quart Instant Pot. If you are using a different brand or different size electric pressure cooker, consider modifying the recipe as your results may vary from ours. Example: If you are using an 8-quart, consider adding more liquid as the larger circumference often needs more liquid to come to pressure.
_____
MAKE A FAMILY MEAL:
- For the weight-loss plan, enjoy with the cream for an S option or without (using chicken breasts) for an FP. Have a big bowlful or two alone, or spoon it over Troodles (zucchini noodles) and it becomes almost like a kicked-up spaghetti sauce. Add an on-plan bread from the Breads chapter (page 240) such as WWBB Garlic Bread (page 245) if desired.
- If making the FP version, you can enjoy it over whole-grain rice for an E.
- Children or others needing Crossies can enjoy the S version with whole-grain rice or noodles for a Crossover.
