If you stock your freezer with a bunch of Marvelous Make-Ahead Meatballs (page 208), then making this meal will be a breeze. Transfer a baggie of the meatballs from the freezer to the fridge the night before you make this meal and they’ll be mostly thawed and ready enough for the crockpot. Or you can use fully frozen meatballs in an electric pressure cooker. This recipe is found in the “Sanity-Saving Crockpot & Electric Pressure Cooker Meals” section of Trim Healthy Table, page 107. Instructions

  1. Put the seasoning blend in the bottom of a crockpot. Place the meatballs on top. Blend all the other ingredients in a blender for 1 minute, then pour over. Cover and cook on low for about 5 hours. (We have started with frozen meatballs before and cooked on high; we’re still living to tell the tale, but don’t sue us if you try the same and things don’t work out.)

(If you choose to use frozen meatballs in the crockpot, that’s sorta against the rules. You’d be a rebel but we doubt it will kill ya.) If we can’t twist your arm into making your own meatballs, you can buy store-bought frozen meatballs; however, you’ll need to find some with 3 or less grams of carbs since any more carbs than that means too many fillers.

ELECTRIC PRESSURE COOKER DIRECTIONS: Spray a pressure cooker pot with coconut oil and add all the ingredients, including the blended sauce. Seal and cook at high pressure for 15 minutes. Use quick pressure release.

NOTE: (This recipe was created and tested using a 6-quart Instant Pot. If you are using a different brand or different size electric pressure cooker, consider modifying the recipe as your results may vary from ours. Example: If you are using an 8-quart, consider adding more liquid as the larger circumference often needs more liquid to come to pressure.)

MAKE A FAMILY MEAL:

For the weight-loss plan, you can eat these as an FP in a bowl over Cauli Rice (page 263) if you use the ultra-lean meat called for in the FP version of the meatballs. Throw down a side salad with a lean dressing and you’re set.

Or put them over brown rice for an E. If using regular beef in your meatballs, these will be an S (most store-bought meatballs will be an S also), so omit the brown rice and use sautéed Not Naughty Rice, Trim Healthy Rice, or riced cauliflower.

Children can include a carb like whole-grain rice, plus a fat such as a creamy dressing on a salad, for a Crossover.

Note: If your kids don’t like onions, you can leave the seasoning blend out and just use 2 red bell peppers or no veggies at all
