Wake Up Trim Down Carrot Cake Bars

Wake up the waistwhittling way and grab yourself a generous square of energizing awesomeness. The balanced amino acid profile of this breakfast pairs perfectly with the gentle carbohydrates and provides an adrenal-nurturing, body-repairing, and anti-aging breakfast. Instructions

  1. Preheat the oven to 350°F. Lightly spray 3 standard loaf pans or one 9 × 13-inch baking dish with coconut oil. (They cook faster in the loaf pans and I prefer the texture this way.)
  2. Place the egg whites and grated carrots in a food processor and process well. Add all the other ingredients and process just to the point where most of the oats are in smaller pieces but not processed to smithereens! Scrape this mixture into the prepared pans or baking dish. Bake until the top is just done, 40 minutes for the larger pan, or 25 to 30 minutes for the smaller loaf pans. For the bars made in the loaf pans, remove from pans and cut each one in half, then cut one of the halves into 5 pieces (that way you have 1 large piece and a mini piece for your breakfast). For the large pan version, simply cut into 5 squares or bars inside the pan, and then remove.

  • The gentle but steady flow of caffeine from oolong tea leaves contained in these bars will not only put a spring in your step but also ignite a fire under your metabolism. Oolong tea is a powerful fat burner. These ancient tea leaves of the Orient brew inside the moist mixture while it steams in the oven, infusing every morsel of these bars with fat-melting power.
  • These squares are moist and almost springy in texture and proudly flaunt their carrot flavor mixed with the earthiness of the tea leaves. Since they are so easy to bake ahead for grab ’n’ go, they work perfectly for in-the-car “rush hour” breakfasts as well as afternoon pick me- up snacks for out of the house afternoons.
  • They also freeze well, which makes this Trimming breakfast easy peasy perfect. (Oh BTW, Pearl and I had a big FIGHT about how sweet these should be . . . I only use ¼ cup Gentle Sweet and that is it. I hate breakfast bars that are too sweet, but Pearl, the bossy big sister, said she much prefers them sweeter . . . she does the final editing of our books, so her version is the one written in . . . boo to her!)

NOTE: These are delicious as is or top them with creamed 1% cottage cheese (blended quickly with a stick blender) or 0% plain Greek yogurt. Add a doonk of stevia or a squirt of vanilla extract and/or a squeeze of lemon.
