Children love these patties and we Mamas love them because tuna is such a budget-friendly protein. If you have picky onion haters in your family, simply leave that ingredient out. You have a choice of making these two ways, with either lime and cilantro for a fresh bold taste or with lemon and parsley for a more traditional approach. Both are wonderful, but our favorite is the traditional lemon and parsley. This recipe is a family-serve recipe that feed approximately 6 to 8 people. (Halve if your family is smaller.) Zesty Tuna Patties

Instructions

  1. Place the tuna, eggs, onion, Baking Blend, mayo, and jalapeños in a bowl. Add the parsley and lemon juice for the parsley-lemon version; add the cilantro and lime juice for the cilantro-lime version. Add the salt and pepper.
  2. Working in batches of 4 to 5 cakes, heat 1 tablespoon coconut oil and 1 tablespoon butter in a large skillet over medium to medium-high heat. Drop rounded ¼-cup amounts of the mix into the pan. Spread the patties out a little and sauté them until they’re heated through and well browned on both sides. Repeat for more batches, each time using 1 tablespoon butter and 1 tablespoon coconut oil for frying.

MAKE A FAMILY MEAL:

  • For the weight-loss plan, these patties are fabulous with some Cottage Citrus Dip or the herby variation (page 523) on the side of your plate. A side salad completes the meal, or enjoy Killer Green Beans (page 261).
  • Growing children can enjoy brown rice or sprouted grain bread on the side.
