Instructions

  1. Place the grated zucchini in a colander over the sink. Toss with the salt and allow to sit for 5 to 10 minutes. After that time, squeeze down the zucchini using a clean cloth to drain out as much of the liquid as you can, but no big deal if some remains.
  2. Transfer the zucchini to a large bowl and combine with eggs, Baking Blend, Parmesan, garlic, pepper, nutritional yeast, and onion (if using).
  3. Working in batches, heat 1 tablespoon butter and 1 tablespoon coconut oil in a large skillet over medium to mediumhigh heat. Drop generous tablespoon-size mounds of the mixture into the skillet. Flatten them out with a spatula so the zucchini gets cooked through. Brown on both sides. Continue to cook more batches, each time using 2 tablespoons of the fat.

Note

MAKE A FAMILY MEAL:

  • For the weight-loss plan, pair this with Kickin’ Dippin’ Sauce (page 518) if desired and/or have it with Mashed Fotatoes (page 264).
  • Children can enjoy this with brown rice or with fruit on the side.
  • Enjoy a Speedy Chocolate Milk  (page 457) or one of the baby-size shakes (see pages 469 to 490) with or after your meal to amp up the protein, or end your meal with a hot drink with added collagen.
