Place the grated zucchini in a colander over the sink. Toss with the salt and allow to sit for 5 to 10 minutes. After that time, squeeze down the zucchini using a clean cloth to drain out as much of the liquid as you can, but no big deal if some remains.

Transfer the zucchini to a large bowl and combine with eggs, Baking Blend, Parmesan, garlic, pepper, nutritional yeast, and onion (if using).

Working in batches, heat 1 tablespoon butter and 1 tablespoon coconut oil in a large skillet over medium to mediumhigh heat. Drop generous tablespoon-size mounds of the mixture into the skillet. Flatten them out with a spatula so the zucchini gets cooked through. Brown on both sides. Continue to cook more batches, each time using 2 tablespoons of the fat.
