Melt the coconut oil in the hot water and place it in a blender. Add the 1½ cups cold water, avocado, cocoa powder, sweetener, salt, vanilla, chocolate extract, lecithin (if using), and collagen (if using). Blend for about 30 seconds on high.

Add the gelatin to a mug with the 2 tablespoons cold water and stir, then add the boiled water and stir again. Turn the blender on low and add every drip of the gelatin mixture while the blender is whizzing. Place the lid back on and blend on high for 20 seconds.

Pour the mixture into 2 pint jars and refrigerate overnight. You need to wait the full night (or several hours) for the perfect setting. If it looks a little too set, just give it a good stir with your spoon and it will be thick, smooth, and creamy. This recipe is so simple and quick that you can keep making it in such a way that you have 1 batch setting while you are enjoying the other.
