This recipe makes a tasty, quick lunch if you’re home during the lunch hour, but they’re also great to pack and go if you (or hubs) work outside of the home and have access to a refrigerator and – close your eyes, Serene – a microwave. Avo Bacon Noodle Toss

This recipe makes a tasty, quick lunch if you’re home during the lunch hour, but they’re also great to pack and go if you (or hubs) work outside of the home and have access to a refrigerator and - close your eyes Serene - a microwave. Instructions

  1. If using turkey bacon, cook it in the coconut oil in a small skillet along with the garlic and pepper until the bacon is crisp, about 5 minutes. If using pork bacon, simply sauté it in the skillet without the extra fat
  2. Add the noodles, soy sauce, and sesame oil. Stir to heat the noodles for a couple of minutes, then taste and adjust the seasonings.
  3. Put the contents of the skillet in a bowl, add the avocado, and sprinkle with the red pepper flakes and enjoy.
