Baked Trim Healthy Pancakes

I love to change things up on Saturday morning and have a breakfast that I haven't had all week. Instead of making pancakes on the griddle, I baked the Trim Healthy pancake recipe on page 223 of the original Trim Healthy Mama book. They turned out great! Prepare a baking sheet with parchment paper.

Prepare the Trim Healthy Pancake recipe on page 223.

Spoon the batter, into pancake shapes, onto parchment paper. Allow room for the pancakes to spread a bit without touching each other.

Bake in a 350 degree oven for approximately 25 minutes.

A great change up is adding a flavoring, such as butterscotch extract, to the batter!
