Instructions

  1. Preheat the oven to 225°F.
  2. Put each roast in a 9 × 13-inch baking pan. Sprinkle 1½ teaspoons salt on each, then sprinkle liberally with the other seasonings (except for the cayenne pepper if you have little ones who are sensitive to spice). Pour about 1 cup of water around each roast. Cover each roast with aluminum foil and bake for 3½ hours (for example, put your roasts in the oven around 2 p.m. if you want to eat by 6).
  3. Remove the foil, then turn the temp up to 400°F and roast for another 20 minutes. Ladle some of the meat juices on top of the roasts, then broil the top of the meat for five minutes before taking out of the oven (watch that top of meat does not burn).

Pearl Chats: "I love that bone in roasts provide glycine to our bodies, a sadly missing amino acid in our modern world. But as healthy as this is, that is not the main reason I make this dish - it is for the sheer love of it. The roasting meat makes my house smell amazing while cooking and my family cannot get enough of this.  I prepare two roasts at a time, each one is 3-4 pounds. I cook them long and slow which makes the meat incredibly succulent then I crisp it up at the end. I try to keep some left overs  for the next day (which means hiding it from my teenage boys) and I’ll make an S sandwich out of it for my husband and top a salad with it for me."
