Preheat the oven to 350°F if baking the muffins. Lightly coat an 8-cup muffin tin with coconut oil spray.

Whisk the egg in a small bowl or, if microwaving, in a large coffee mug. Add the remaining ingredients and mix well. If baking, divide the batter between 2 muffin holes and fill the remaining holes with water (gives a nice steaming effect); bake for 15 to 17 minutes. Or, microwave in the mug for 1 minute 20 seconds.
