Heat the butter in a small skillet over medium-high heat, add eggs, and scatter the bread cubes and sausage (if using) around and on the eggs. Sprinkle with the nutritional yeast, Parmesan (if using), hot sauce, and seasonings. Cook until set and crispy on the underside, 3 to 4 minutes. Flip in one piece (hopefully) and cook for 1 to 2 minutes to seal in the soft yolks or cook them until they are firm, if preferred, an additional couple of minutes.

Slide the eggs onto a plate in one large group hug (but if that does not work, imagine these directions as telling you that a broken Breaggie Fry Up is preferable). You’re good to go.

"When writing the Trim Healthy Mama Cookbook, we saved the “Good Morning Eggs” chapter for last because we thought it would be the easiest. Perhaps you’re still fresh into owning the cookbook, but it had been months and months for us at this point. In fact, this is our last week of writing and Serene has five weeks to go until she has the baby! Currently, it seems all our brain cells were used up for other chapters. We’ve been in fits of uncontrollable laughter imagining possible reviews of this book…
- “The recipe titles look like they have been written by kindergarteners high on kool-aid.”
- or... “Sadly, the entirety of the book is based around collagen… a product they sell! Shameless.”
- Or more likely this one… “Every recipe uses okra!”
Our imagined response is that okra is “stellar”and so is this recipe… so enough of our nonsense… go make it!"
NOTE: In place of Swiss Bread you can use 1 piece sprouted or sourdough bread for an S Helper or 2 pieces for a Crossover—yum!
