Preheat the oven to 350°F. Lightly coat a 12-cup muffin tin with coconut oil spray.

Combine all the ingredients except the banana in a large bowl. Fold in the banana pieces gently. Spoon the batter into the muffin holes, making sure to get some banana pieces in each muffin. Bake for 16 to 18 minutes .
