Preheat the oven to 350°F. Lightly coat a 10-inch round springform (or other) pan with coconut oil spray.

Make the cheesecake. In a mixing bowl, beat the cream cheese with the eggs, Super Sweet Blend, lemon juice, and vanilla. (If you don’t mind tasting batter with raw eggs, taste and adjust for sweetness.) Pour into the crust (if using), or directly into the prepared pan

Bake for approximately 35 minutes. Allow the cheesecake to cool completely.

Make the topping. Top the cheesecake with the berries. Drizzle on the melted chocolate and then chill in the fridge so the chocolate sets.
