Combine the Baking Blend, salt, pepper, and onion powder on a large dinner plate. Rinse the fish fillets so they are damp, not dry. Place each fillet onto the breading mix to coat well, then turn over and coat the other side; the flour will stick because of the moisture.

Heat an equal amount of coconut oil and butter in a large skillet set over medium-high heat. Fry 3 to 4 fillets at a time, turning once, about 3 minutes per side.
