A “glosting” is a delicious, drippy, messy, lick-your-fingers cross between a glaze and a frosting. If there is no name for things, one must make up fitting names, we think. Our Luscious Lemon Cake (page 289) also has a glosting that’s to die for—or we should say, to live for! We enjoy glosting on so many THM treats. This recipe is in the “Sweet Treats – Family Muffins” section of the Trim Healthy Mama Cookbook, page 285. This recipe makes 12 medium muffins to serve approximately 6 people.

Instructions

  1. Preheat the oven to 375°F. Insert paper liners into the cups of a 12-cup muffin tin or lightly coat with coconut oil spray. (The liners make removing the muffins, which are very moist from the raspberries, an easier task.)
  2. Make the muffins. In a large bowl, whisk together the eggs and egg whites, almond milk, coconut oil, and extract, then incorporate the Baking Blend, Super Sweet, and baking powder and soda. Whisk until you have a smooth batter. Allow the batter to sit and thicken a little, 2 to 3 minutes, then fold in the raspberries and combine gently.
  3. Fill the muffin cups with batter and bake for 20 to 25 minutes, or until the tops are just done. If you’ve used frozen berries, the baking may take a bit longer.
  4. While the muffins are cooling, make the glosting. Combine the butter and cream cheese in a small bowl. Whisk until smooth, then add 1 tablespoon of the almond milk and the extract. Whisk until completely smooth, then add the rest of the milk followed by the Gentle Sweet. Keep whisking until combined properly.
  5. Drizzle the glosting all over the tops of the muffins, allowing some to drop down the sides to make muffins a drippy, delicious mess.
