Lightly coat a small skillet with coconut oil cooking spray. Place the skillet over medium-high heat and crack the eggs into the skillet. Sprinkle the eggs with the salt and pepper and cook to your preference.

Put the avocado chunks on one side of a dinner plate and your cooked eggs alongside them. Drizzle both the avocado and eggs with the olive oil and then sprinkle with the cheese and nutritional yeast. Enjoy all the drippy goodness!
