This is just plain yummy and super fun to eat. Even though we still enjoy regular Greek yogurt here and there, now that we have our fridges stocked with this delightful stuff, it’s hard for us to go back. But the yumminess factor is not the reason we developed this recipe. There must be balance with all things, and even though Greek yogurt is welcome, on-plan and considered a Fuel Pull, it can be overdone. It can become such an effortless go-to snack that you may not realize you are eating it multiple times a day, and that can cause an imbalance of your very important amino acid levels. Instructions

  1. Place the gelatin in a 1 cup measure. Add a little cool water, stir to dissolve the gelatin, then add a little hot(not quite boiling) water and give a good stir until you have no clumps. Top off the measuring cup with water to the brim.
  2. Place the gelatin mixture in a blender. Add the remaining 1 cup water and all the remaining ingredients except the yogurt, and blend to a smooth mixture. Add the yogurt and gently pulse the blender just a few times to combine.
  3. Place the yogurt mixture in a container with a lid in the fridge, and chill to set. It will take a good 24 hours to reach its peak, delicate jiggly curd, so be patient.

"There are certain Mamas who find that over-consuming dairy halts their weight-loss progress. They can handle a little, but too much makes that scale get stuck in limbo. Those who have thyroid antibodies may need to stay away from dairy totally (especially pasteurized), and you can try our No Gurts (links listed below), but others may simply need to eat less dairy and incorporate more glycine-rich foods that have balancing qualities before they can start seeing that scale move again (see “Note for Those with Stubborn Weight,” page 347). We designed Jigglegurt so these Mamas can enjoy the benefits of yogurt without the problems that occur when it is eaten in excess.

This recipe stretches Greek yogurt to a larger volume so you feel like you are eating more but actually eating less.  It also lowers the carbs and calories so it becomes a smarter late-night snack or dessert than Greek yogurt alone.  Jigglegurt also saves a buck or two, since you are turning 2 cups of yogurt into 4 cups.  So, this is not just for those with stubborn weight issues, it’s for budget-minded Mamas, too."

Additional Note:
If you would like your Jigglegurt to be more dense, add ½ teaspoon Gluccie to the first blending of ingredients or add another ¼ teaspoon Just Gelatin. And if you become a Jigglegurt lover, you can jigglify your whole tub of yogurt by doubling all the recipe’s ingredients. That way, if you previously had to buy two containers of yogurt per week, now you’ll get by with
just one.
