Preheat the oven to 225°F.

Place the thighs skin side up in 2 or 3 large baking pans. Sprinkle the tops of the chicken generously with the seasonings. Cover the pans with foil and bake long and slow, for 3 hours.

Remove the foil, turn the oven up to 425°F, and crisp the chicken for the last 20 minutes. (If the tops of the chicken are not quite crispy enough, at the end you can broil for just a few minutes, but watch closely so they don’t burn.)
