This recipe is found in the "Oven-Baked or Roasted Meats" section of our Trim Healthy Mama Cookbook, page 165. This is a family-size recipe that will serve 6 to 8 people.

Instructions

  1. Preheat the oven to 225°F.
  2. Place the thighs skin side up in 2 or 3 large baking pans. Sprinkle the tops of the chicken generously with the seasonings. Cover the pans with foil and bake long and slow, for 3 hours.
  3. Remove the foil, turn the oven up to 425°F, and crisp the chicken for the last 20 minutes. (If the tops of the chicken are not quite crispy enough, at the end you can broil for just a few minutes, but watch closely so they don’t burn.)
