When it comes to lunch time, we like BIG, HEARTY, FILLING bowls of soup that don’t take BIG chunks of time out of our day to make. Get filled up fast for lunch (or use these for a quick dinner) and allow the healing ingredients to work their health promoting, slimming powers in your body. This quick, single-serve soup recipe can be found on page 118 of the Trim Healthy Mama Cookbook.

Instructions

  1. Place the sweet potato in a small saucepan with the water, cover, and bring to a quick boil over high heat. Reduce the heat and simmer until tender
  2. Transfer the sweet potato and some cooking water to a blender. Add all the remaining ingredients except the tomatoes and salmon or chicken (if using). Blend to a smooth puree, venting the hot air periodically for safety. Pour the puree back into the saucepan, add the tomatoes and the salmon or chicken, and simmer for another minute or two.
  3. Taste and adjust the seasonings to “own it.”

"Sweet potato is the star again in this soup, but this time the flavors are zesty and perhaps a little bit naughty instead of sweet and mild like a good little child in the Cream of Sweet Stuff Soup.  If you don’t have any cooked meat handy, it is not essential so just leave it out. You can always add 2 tsp Just Gelatin during blending process to further up protein content."

SERVING IDEA: Garnish with parsley flakes and a sprinkling of grated pecorino cheese.
