Hearty Red Soup

Bring 5 lbs. ground beef in large pot and drain, if not using grass fed beef.

Add 3 sliced onions and a whole sliced cabbage, 1 frozen package of long green beans, and 1 whole bunch of parsley, finely chopped.

Add enough water to the pot to cook vegetables (you do not necessarily need to cover veggies with water as they will sink down and wilt as they cook).

Add 3 small (6 oz) cans of tomato paste.

Add following spices to taste: sea salt, lots of black pepper, Braggs Liquid Aminos, tamari, onion and garlic powder, nutritional yeast, and optional crushed red pepper flakes.

Add more water as needed to obtain desired soup consistency. It does not need to be extremely brothy.

Once vegetables are tender and soup flavors have mingled, add a dollop or so of cream or tahini to cut the acidity of the soup and bring out the depth of flavors.
Note
This may be served with warmed and buttered whole wheat pita bread for the growing children. You may enjoy a coconut dinner roll with this meal or choose any of our S cracker recipes options. Since this soup makes a large batch, you can freeze leftovers to be reheated for "no brainer" nights.
