Crack 1 egg into coffee cup and whisk it well with a fork.

Add 1½ Tbsp golden flax meal and 1½ Tbsp almond flour (or grind your own).

Add 1 Tbsp water.

Add 1 heaping Tbsp unsweetened cocoa powder.

Add 2–4 tsp THM Super Sweet Blend or 2–4 doonks THM Pure Stevia Extract Powder (or a combination of both). Many find Super Sweet Blend works better when making chocolate flavored muffins. You may prefer only 2 tsp THM Sweet Blend or only a couple doonks Stevia Extract, if you are not a real sweet muffin lover. Newbies switching over from a high sugar lifestyle may want to add quite a bit more. Own your recipe. Some may even want to try Xylitol for this recipe.

Add ½ tsp aluminum free baking powder.

Add 1 flat Tbsp coconut oil, either extra virgin or cooking style like Louanna brand. It doesn‘t matter if coconut oil is solid from being cold.

Stir vigorously (a mini workout for your arm).

Microwave for 1 minute. (Serene says you can bake in the oven in a ramekin at 350 for 10–15 minutes or use a waffle iron). The muffin should easily plop out of the mug when turned upside down and thumped a little. Dump it out on a plate.

Cut it in half and smear each half with a little pat of butter, or if you prefer, top it with Greek yogurt. Mmmmm! You may need to play with sweetness levels in this recipe to find what is right for you.
Note
The only people who may want to skip this recipe will be those (like Serene) who don’t believe in microwaves. They can go directly to the muffin recipes which are oven baked. Just make sure you don’t use a plastic cup when making this muffin. Use a ceramic mug as plastics in the microwave may leech chemicals into your food. Walmart and most grocery stores have all the following ingredients, including golden flax meal and almond flour.
Recipe Variations:
This muffin may be made with other flavors if you do not desire chocolate. The recipe requires a total of 4 Tbsp dry flour. In the chocolate version, 1 Tbsp comes from cocoa powder. That’s why we only do 1½ Tbsp each of flax and almond flour to make up the other three.
- Banana Nut version, use 2 Tbsp each of flax and almond flour, add chopped nuts and banana extract.
- A cinnamon version may be made using 2 tsp cinnamon, 2 Tbsp flax and 1 Tbsp plus 1 tsp almond flour.
- Another fantastic way of making this muffin is to use 2 scant Tbsp of flax along with 2 larger Tbsp of extra dark cocoa powder. If you add berries for extra moisture content, or add 1 Tbsp of water you can make what we like to call a Volcano Mud Slide muffin. Don’t cook it until it’s completely done. That means without berries, you will only microwave for 40 seconds instead of one minute. If using berries, you’ll need the full minute or slightly more, but don’t go all the way. The muffin should be slightly gooey in the center.
IP Modifications:
Put all ingredients into a mug, place on a trivet with two cups of water. Cover mug with aluminum foil to keep off condensation. Bring water to a boil and add lid, leaving the vent open. Steam for 20 minutes, leaving vent open.

Icing Options:
- The chocolate muffin goes great with a raspberry version of the same—1 pat butter, 1 pat cream cheese, a few thawed raspberries, and THM Pure Stevia Extract or ground THM Sweet Blend to taste.
- The cinnamon version goes great with a quick icing topping made from one pat butter, one pat cream cheese, squirt of lemon, and THM Sweet Blend or THM Pure Stevia Extract to taste.
Budget Friendly Ideas:
If you cannot afford almond flour, or even almonds to grind up yourself, you can make this muffin with only golden flax meal which is friendlier to budgeters. Use 3 Tbsp flax and 1 Tbsp cocoa for the chocolate version. It is still a pretty great muffin that way. In fact, we like flax meal slightly more than almond flour for S baking when it comes to weight loss. It has less net carbs and slightly less calories. You may want to start out using both almond flour and flax meal together since that produces a more “flour” like muffin. However, you’ll find that as you get used to it, you can reduce the almond flour.
