Serene says: “This is one of my favorite weekend breakfasts, followed by coffee with cream. The omega-3 fats in the eggs are not destroyed by the high heat of frying with coconut oil. I feel like royalty when eating it, and the omega-3s from both the eggs and the sardines are through the roof!” You can find this recipe on Page 216 of the Original Trim Healthy Mama book!

Cooking Mode Disabled

Instructions

  1. Melt the coconut oil in pan on medium/low heat.
  2. Crack in the omega-3 eggs, and season with nutritional yeast, sea salt, and black pepper.
  3. As soon as the whites turn opaque, cover pan with lid and immediately turn to low.
  4. Steam for 5–10 minutes, according to how soft you like the yolks.
  5. Once ready, do not divide the eggs but lift whole onto plate.

Note

Optional Note: To raise the omega-3 value, two minutes before steaming is complete, arrange half a tin of drained wild caught salmon sardines in EVOO on top of the steaming eggs to slightly heat for the last couple of minutes. When the eggs are plated, sprinkle on walnuts which are the highest nuts in Omega-3. Finish with a dash of hot sauce and a dollop of extra virgin coconut oil.
