Peachy Cream Stuffed French Toast

For the Cream Filling

Mix the ingredients for the cream filling together in a blender or food processor until smooth, set aside.

For the French Toast

Combine the egg whites, unsweetened almond milk, cinnamon, vanilla extract and sweetener in a bowl and mix until well incorporated, set aside.

Lightly grease the bottom of an 8x8 pan with a tsp of butter or coconut oil spray.

Lay out 4 slices of on-plan bread into the bottom of a pan. It is okay if they overlap.

Spread the cream filling mixture over the bread.

Spread the sliced peaches over the creamy filling.

Pour half of the egg mixture over peaches.

Cover with 4 more slices of bread.

Pour remaining egg mixture evenly over the top of the bread.

Cover with foil.

Bake covered at 350 degrees for 20 minutes, then remove foil and bake for another 20 minutes or until egg mixture is cooked and the top is slightly browned.

Sprinkle with a little Gentle Sweet and more cinnamon if desired.
Note
Serving Suggestions:
- For "growing kids", slather their serving with butter for a nice crossover.
- Other fruits to try this recipe with would be apples, blueberries and other berries such as raspberries or strawberries.
