"Fresh Start Menu" Notes & Serving Suggestions
Serene Chats: I don’t like to use any dressing made from soybean or canola oil unless I have no other choice. I prefer homemade dressings. If I am eating out, I stick with balsamic vinegar and olive oil. Pearl told me to be nice and not freak out our regular mamas with my purist idealism. She thinks I might turn folks away from a weight loss plan that will be healthy for them, regardless of a little “not so perfect” dressing. Our debate found a meeting ground by agreeing that the most important thing is to watch for hidden sugars in your dressings if you buy them from the store. I guess I will have to overlook that Hidden Valley Ranch some may have slipped into their shopping cart!
Pearl Chats: Sometimes, just saving time wins out for people like me who don’t want to constantly make everything from scratch. We don’t want to live with so many rules and regulations that we feel like throwing it all in and feasting on potato chips. I’ll admit to using store-bought Ranch dressing, but not all the time, and I always water it down a little. Ken’s Ranch is my go-to, because it only has one carb. But, I often make my own homemade dressings when I have more time, or want to be healthier. I like to switch it around about 50/50. For E Dressings, I sometimes buy Newman’s Own “Light Balsamic” and use it when I’m in a hurry. It tastes great, is low in sugar, and does not have too much fat for E purposes. But, I know that since it has soybean oil in it, I shouldn’t rely on it. Therefore, many times, like Serene, I drizzle balsamic and a little olive oil for E, or a lot of olive oil for S, and know I’m doing my body a better favor.
