Preheat the oven to 350°F if baking the muffins. Lightly coat an 8-cup muffin tin with coconut oil spray.

Mix all the ingredients except the apple and cinnamon in a large coffee mug for microwaving or a small bowl if baking the muffins. Fold in the diced apple. Sprinkle the cinnamon on top of the batter, and then carefully fold the batter over the top and around it just a few times (it should not be fully mixed in).

Microwave for 1 minute, 20 seconds in the mug, or divide the batter into 2 muffin holes of the muffin tin and fill the other holes with water (for a nice steaming effect). Bake for 15 minutes or until just cooked through. You can also use a large ramekin for the oven, but bake a few minutes longer.
