This idea of making salad your full meal a few times in your week is an awesome habit to get into. You’ll receive plenty of protein and since leafy greens are such a great filler, you can eat as much as you want of them, don’t put a measly amount of salad on your plate. Load Up! Instructions

  1. Smash the tofu with a fork and combine in a large bowl with the remaining ingredients. Toss well. Taste, and if it needs a bit more salt, add the pinches of salt.

"We know the whole scoop about soy and all its problems and we agree with all that when it comes to overdoing regular unfermented or unsprouted soy. But properly cultured soy used in smaller amounts amidst a balanced diet (as in the cultures where it hails from) can be a healthy part of a diet and not the deadly villain we are told to steer clear of. (We do not recommend uncultured or unsprouted soy products).

After years of abstaining from tofu, after turning from our vegetarianism ways, we decided it was time to take a more balanced approach. Sprouted tofu has brought this yummy comfort food back to our tables. Tofu may not be for everyone and you sure don’t have to eat it on plan but wow this is good! We enjoy the following two recipes in lettuce cups (wrapped in lettuce) or just as is, with a small-sized, smoothie, shake or frap on the side "
