- Peel an eggplant and slice it into roughly 1/4 inch thick round slices (these are the bases).
- Season eggplant slices with a little sea salt and black pepper.
- Layer with cheeses, veggies, meats, and optional tomato paste.
- Brown in broiler or 350 degree oven until the cheese is melted.
