"We Drive Thru Sue’s will opt for canned beans for this recipe. Why do extra steps when you don’t have to right? Just make sure to drain the beans first and it is best to find canned beans without BPA. Purists like Serene and her peeps will probably want to use home soaked and cooked beans. More power to ya! The ¾ cup amount of beans in this soup still leaves you room for a slice of sprouted or sourdough toast on the side with a small smear of butter, if you wish (I’m a store-bought, sprouted bread kinda gal). Or have a piece of Swiss Bread and a side salad (with a lean dressing if your blood sugar does better with one E fuel at a time)."
SERVING IDEAS: Top with a dollop of 0% Greek yogurt and garnish with a sprinkling of skim-milk mozzarella (to keep fat contained within E settings); however, this soup is so flavorful the cheese is not really needed.
NOTE: The beans offer some protein, but you can up the protein with either a scoop of Integral Collagen or some diced cooked chicken. Alternatively, you can enjoy some Lemon Pucker Gummies (page 387) or Berry Yummy Gummies (page 388), or a couple of Superfood Chocolate Chews (page 383) for a treat-like protein boost.
