This is a great pie base to use sometimes as it is lighter than our Traditional Pie Crust (page 408). Although delicious, you don’t want to use heavy crusts all of the time. Take out the sweetener, add a dash more salt, and it also makes a good savory base for a quiche (see the variation below). You should know ahead of time that this crust won’t press into the sides of your pie plate as it is more of a wet mixture than most pie crusts before baking. It is only a base for the bottom of your pie. It has the same ingredients as the Beauty Blend Graham Crackers (page 504), but in a smaller quantity so your crust doesn’t get too thick.
