Beauty Blend Cereal

SERENE CHATS: Missing cereal? Welcome it back! This is reminiscent of Grape-Nuts. As written, this cereal is only mildly sweet; we tried to add more sweetener to it but then it wouldn’t crisp and crunch as well. You’ll want to add a rounded teaspoon or more of Gentle Sweet to your bowl once you have poured in your unsweetened nut milk. That gives the perfect, sweet cereal result and you’ll happily crunch and slurp your bowl down. My husband loves this stuff and not just for breakfast. He gets hangry at night and this is a lovely lighter option for a late-night snack if you don’t stuff too many nuts in it. Preheat the oven to 300°F. Line an extra-large 11½ x 17½- inch rimmed baking sheet with parchment paper.

Put the Baking Blend, gelatin, collagen, baking powder, salt, and sweetener in a food processor and pulse to combine. Add the butter and pulse a few times to coat with flour. Add the egg whites,vanilla, and cinnamon (if using) and blend for another few seconds. (Or blend all in a bowl with a stick blender.)

Pour directly onto the baking sheet and spread out with the back of a spatula. You want to spread it as thinly as possible to cover almost the entire sheet, think thin cracker depth. Leave only about ½ inch on all sides that is not covered.

Bake for 20 minutes, then reduce the oven temperature to 170°F and keep in the oven for another 2 to 3 hours. Turn the oven off and let cool in the turned-off oven. Once cooled, break up the crackers into chunks, then place in a food processor. Pulse until they turn into little crunchy pellets (similar to Grape-Nuts) and store in a zippy bag.

Once ready to eat, pour into a bowl, then douse with unsweetened almond milk, adding a teaspoon or so of Gentle Sweet for added sweetness, if needed. The addition of a handful of blueberries and almonds rocks this cereal bowl into a yummy breakfast taste bud party.
