Whip up a batch of these, store in the freezer in baggies then all you have to do for a quick protein centered breakfast is pop them in the toaster and smear with butter or peanut butter and syrup. They are fluffy, white and delish just like store bought toaster waffles but instead of fattening you up . . . they trim you down! We have included Basic Pancake Syrup (page 60) but if you feel too lazy to make your own syrup, you can find some stevia and erythritol or xylitol sweetened syrups online or truth be told some of us Drive-Thru Sue’s use a sugar-free grocery store syrup sometimes and hope Serene is not watching—(from Pearl)—wink). PEARL CHATS: Just like the white toaster waffle kind . . . turn your family on to these waffles and you won’t turn back. Kids and grownups alike love them. I have Serene’s children coming to my house to ask me for these . . . (she better start making them!). Make up a batch, store in the freezer, then all you have to do is pop them in the toaster and smear with butter or peanut butter and syrup. Yum! This recipe is found in the "Breakfast & Baked Goods, Blood Sugar-Balancing Breakfasts" section, page 336 of the Trim Healthy Table Cookbook.

Multiple Serve Recipe ~ Makes 13 to 16 waffles. Enjoy 2–3 for a serving depending on your breakfast appetite.

Instructions

  1. Turn on your waffle iron and spray it well with coconut oil (or other) cooking spray.
  2. While the iron is heating, put all the ingredients in a blender and blend for about 30 seconds. Let the mixture rest for 10 seconds, then blend again for another minute. Leave the batter to rest for about 10 minutes to thicken up.
  3. Put a generous ¼ cup batter in each waffle square and cook according to your waffle iron’s instructions. You should get between 13 and 16 waffles, more or less depending on the size of your iron.
  4. Freeze the waffles, 2 to 3 in each baggie (depending upon your preference), and toast to heat. Serve with a pat of butter and Basic Pancake Syrup if desired.

Note

We have included the easy recipe for Basic Pancake Syrup (page 516) from Trim Healthy Mama Cookbook in case you don’t have that, but some of us Drive-Thru Sue’s sometimes use a sugar-free grocery store syrup and hope Serene is not watching.
