Preheat the oven to 375°F. Spray 12 cups of a muffin tin with coconut oil.

Whisk together the whole eggs, egg whites, nut milk, coconut oil, and vanilla in a large bowl. Incorporate the Baking Blend, sweeteners, baking powder, and baking soda. Whisk until you have a smooth batter. Allow the batter to sit and thicken a little, 2 to 3 minutes, then fold in the blueberries and combine gently.

Fill the muffin cups with batter and bake for 20 to 25 minutes, until the tops are just firm.

Remove the muffins from the tin and while they are cooling, make the glosting. Combine the butter and cream cheese in a small bowl. Whisk until smooth, then add half of the lemon juice and the lemon extract. Whisk until completely smooth, then add the remaining lemon juice, followed by the sweetener. Keep whisking until combined properly.

Drizzle the glosting all over the tops of the muffins... it should be messy and drippy and not perfect at all.
