This breakfast rice bowl is full of non-starchie veggies and it cooks up "quick as a breeze!" Breezy Breakfast Rice is actually a spin off from a recipe in the newly released Trim Healthy Table Cookbook, "Big Bowl Egg Scram" which can be found on page 331. Be sure to get this thermogenically slimming recipe on your menu for breakfast a couple of mornings this week!!! The flavors and filling factor are outstanding!!!!

1 Single Serve Recipe

Instructions

  1. Steam the frozen cauli rice according to package directions. If using the optional finely diced bell peppers or the frozen Seasoning Blend, please add that to the frozen cauli- rice before steaming.
  2. Place 6 ounces of the steamed rice into a sauce pan on top of your stove over low heat. Fluff the cauli rice and sprinkle a generous pinch of mineral salt on top.
  3. Crack 2 eggs into a separate container. Add to the eggs a 1/2 scoop of collagen (optional), 1 teaspoon of nutritional yeast, 1 teaspoon of miso, 2 squirts of hot sauce, your desired amount of onion powder, garlic powder and parsley flakes.
  4. Stir eggs and the added ingredients until well combined.
  5. Turn your heat up to medium high, pour the egg mixture right over the cauli rice and gently stir the eggs into the cauli rice and cook as if you were scrambling eggs.
  6. Continue to stir the mixture until the eggs are cooked.
  7. Place the cooked mixture into a bowl and pour one or two capfuls of MCT oil on top so that the oil drizzles down inside of the bowl
  8. Sprinkle some pecarino romano or Parmesan cheese on top.

Note

Suggestions from Pearl & Serene: 

  • Steam the entire bag of frozen cauli rice on the first day, use half of the amount for one meal and then refrigerate the other half for your breakfast the next day.
  • If you do not have any of Serene's homemade hot sauce the "Fiery Fermented Hot Sauce", from Trim Healthy Table, page 522, you can use a hot sauce of your choice.
  • If you do not have any hot sauce at all you will need to add a 1/2 Tbsp of apple cider vinegar and a dash of black pepper as you need that tang in this dish.
  • If you do not have any miso, you may need to use a little more mineral salt.
