Preheat the oven to 350°F. Lightly coat an 8-inch square or 7 x 9-inch baking pan with coconut oil spray.

Put the chocolate in a small ceramic bowl and set it above a saucepan of simmering water to melt.

In a food processor, put the butter, eggs, water, pumpkin puree, Baking Blend, Gentle Sweet, stevia powder (if using), salt, and baking soda, then add the melted chocolate. Process well. Pour the batter into the baking pan and bake for 35 minutes. Let the brownies cool, then place in the refrigerator for several hours to form into a fudge.
