Preheat the oven to 325°F. Line the bottom of a 10-inch tube cake pan or springform pan with parchment, cutting out for any spacer in the middle.

In a medium bowl, whisk the baking powder, sweetener, protein powder, and ground psyllium until combined. In a separate large bowl, beat the egg whites and cream of tartar or xanthan with an electric egg beater or mixer on high until soft peaks form. Gently stir in the dry mixture one spoonful at a time until well incorporated.

Pour the batter into the ungreased cake pan, spreading evenly. Bake for 30 minutes, or until golden brown on top.

Allow to cool fully (see Note) before cutting around the sides to release the cake and remove it.

From page 301 of the Trim Healthy Mama Cookbook... "This cake will rise well, but it is normal for it to deflate somewhat as it cools. Some people have success turning their angel-type cakes baked in a tube pan upside down to cool before removing from the pan. You can try this if you want."

This is perfect with a topping of Slim Belly Jelly (page 478), a smear of store-bought all-fruit jelly, or just topped with fresh berries to stay in FP mode. But for an S, oh my, this makes a fantastic strawberry shortcake with real whipped cream and sliced fresh strawberries. Or, try it with the Glosting recipe from page 285 (from the Glosted Raspberry Muffins) or Whipped No Cream (page 490)!
