Caramel Apple Bam Cake

Preheat the oven to 350°F. Lightly spray an 8-inch square baking pan or a 9 × 13-inch baking dish with coconut oil.

In a bowl, beat the egg whites and cream of tartar (if using; or xanthan gum) until soft peaks form.

Measure out ½ cup of the oats and set aside. Grind the remaining 2 cups oats to a flour in a blender. In another bowl, add the whole oats, ground oats, diced apple, applesauce, cinnamon, caramel extract, salt, baking powder, baking soda, sweetener, yogurt, and vanilla and mix well. Finally, fold in the egg whites.

Pour the batter into the prepared pan and bake until golden brown on top, 40 to 45 minutes in the smaller pan, or 30 to 35 minutes in the larger pan. Let the cake cool.

Make the glosting. Whisk the ingredients together. Frost the cooled cake.
Note
You can also prepare this the original BAM way and not bother to beat the egg whites. Simply mix all the ingredients together in a bowl.
