Instructions

  1. Preheat the oven to 425°F. Line 2 large 12 × 18-inch baking sheets with parchment paper.
  2. FOR FRESH CAULI SNOW: Chop the fresh cauliflower into florets and place in a processor. Process completely, past rice size, all the way into snow (which is as fine as it can go . . . sort of like flour). You’ll need to process in 2 batches to get the job done. FOR FROZEN CAULI SNOW: Put the frozen cauliflower into a blender and blend into a snowy powder. You’ll need to process in 2 batches to get the job done.
  3. Put all the cauli snow in a large bowl. Add 1 cup of the mozzarella, the egg whites, Parmesan, salt, oregano, garlic powder, and dried parsley. Mix well and divide onto the 2 prepared sheets.
  4. Using a spatula or your hands, spread the dough out into large rectangles taking up most of the space on the baking sheets but not fully reaching the ends or sides. Don’t let the edges get wispy. Push them in or they’ll burn.
  5. Bake for 25 minutes. Remove from the oven and top each with 1 cup mozzarella. Add toppings to your liking, return to the oven, and bake for another 5 minutes. Cut into small bread sticks ready for dipping.

Pearl Chats: There are quite a few recipes for cauliflower cheese bread on the Internet, but they usually require you to cook the cauliflower first. I’m too lazy for all that. Serene and I have been doing a lot of experimenting with “cauli snow” (blended or processed cauliflower), so I thought I’d try that easy method with no precooking required. I was so shocked and happy when it worked. For these bread sticks I prefer fresh cauliflower processed into snow in the food processor, but if you have only frozen cauli snow, you can use your blender (frozen won’t work in the food processor).

This basic recipe also makes fabulous pizza crusts, similar to our Fooled Ya' Pizza Crusts in Trim Healthy Mama Cookbook but without the extra step of cooking the cauliflower. So much less effort! For pizzas, cook as directed, top with pizza sauce, cheese, and toppings, then put back in the oven and broil until the cheese is bubbling.

NOTE: There is some protein in this recipe but not a ton. I tried putting whey protein in the batter but didn’t like the result. Then I tried collagen... nope, didn’t work in this recipe. Best idea is to pair your bread sticks with Speedy Chocolate Milk (page 457), Speedy Strawberry Milk (page 457), a Trimmy, or any of our drinks that contains protein.
