Sensationally green and surprisingly yummy! Not only is this great as a dip with crackers or crudités but you can serve it as a spread over Serene’s Rustic Pizza Crust (page 212) topped with feta cheese, sun-dried tomatoes, and capers, and you have a Wow Factor pizza! You can also use this dip as the basis for a creamy kale soup; just add boiling water to 2 to 3 tablespoons of this dip and stir well. Garnish with pecorino romano and add a scoop of collagen. Instructions

  1. Combine all the ingredients except the kale, water, and S option olives in a blender and process until very smooth.
  2. Place the kale in a large saucepan with the water. Bring to a boil and then cover and turn down the heat to simmer until cooked; the vivid greens become darker when cooked, about 5 minutes. Drain the kale in a colander, then add the kale to a blender a bit at a time and blend until creamy smooth. Stir in the olives (if using).
  3. Taste and adjust the seasonings to “own it.” Chill and enjoy as a nutritional powerhouse protein dip.

Note

You could grind the chia seeds to a powder in a coffee grinder first to make the blending of the seeds more effective.
