Crack the eggs into a bowl, add egg whites, a small pinch of salt and pepper and whisk until well combined.

Place a large fry pan on medium heat and melt in 1 tsp. butter or coconut oil or spray pan well with coconut or olive oil spray.

Pour the egg mixture into the preheated pan.

Add Light Laughing Cow wedge by dabbing small pieces of it dispersed on one side of the egg mixture. Now add veggies of choice to the same side then season well with your hot sauce or salsa, choice of seasonings and Nutritional yeast, if using. Finally add the grated cheese.

Once the bottom of the egg mixture is slightly browned, fold the omelette in half by lifting the side without cheese and veggies and placing it over other side. Flip the folded omelette if needed and cook for another couple of minutes or until egg mixture is cooked through and cheese is fully melted.

Enjoy your omelette with a small side of fresh berries for added deliciousness and health benefits.

Protein Nerd Notes
Note 1 - This omelet is lovely and large! If you find it too big for you and you get overly full including the 1/2 cup of egg whites with the two eggs, you can instead reduce egg whites to 1/4 of a cup or not use any egg whites and add another egg. If your appetite is very small in the morning, you could just use two eggs without any added egg whites. If opting for any of these lowered egg or egg white amounts you won’t have quite enough protein to start your day. Remember you need 25 - 30 grams to fuel your lean body mass and nurture your metabolism and that is exactly what 2 eggs plus 1/2 cup of whites provides. There are some easy ways to get more bio-available protein in your meal with less food volume. You could add a 1/2 scoop of Optimized Collagen to your morning coffee. Note 2 - If you’re pressed for time in the morning and you don’t have the few extra minutes to chop veggies, fresh spinach is fast and you can use canned diced tomatoes that you open the night before, drain and place in a jar so you can just spoon out a couple of tablespoons the next morning when you make your omelet. Another idea is to purchase a bag of frozen Seasoning Blend… this is a mix that includes pre-chopped peppers with diced onion. Remove some from the frozen bag the night before, place in a small baggie and place in the refrigerator. Now you can just sprinkle contents on your omelet when making it the next morning.
