For the Sauce

Sprinkle the chicken with the salt, pepper, and garlic and onion powders. Place in a large skillet and sauté all at once in the butter over medium-high heat. Sear on all sides, then transfer the partly cooked chicken to a plate and set aside.

Make the sauce. Put all the ingredients except the Gluccie and mozzarella in the skillet and place over medium heat. Slowly whisk in 1⁄2 teaspoon Gluccie. Simmer the sauce for several minutes; it should thicken somewhat as it cooks and reduces. If after 5 minutes it is not thick enough, add another 1⁄4 to 1⁄2 teaspoon Gluccie, whisking well. Simmer for a couple more minutes, then add the grated cheese and stir to combine.

If using the Not Naughty Noodles, add them to the sauce- pan and simmer so they take on the flavor of the sauce, 2 to 3 more minutes.

Add the chicken to the skillet and simmer for another 5 min- utes, until cooked through. Taste and adjust the seasonings, then serve to your liking—“own it”!

Serving Ideas:
If your budget does not allow for the Not-Naughty Noodles, you can serve the chicken and sauce over Troodles (page 222) or Spaghetti Squash (page 224). Growing children may enjoy their portion over whole-grain noodles.
